Ingredients:-
Ingredients from Gujiya maida
Maida:- 2 cup
Ghee:-1/4cup
Sowder sugar:- 1/2cup
Mawa:-100gm
Suji:- 2tsp
Desiccated coconut:- 2tsp
Chopped dry fruits:- 1/2cup
Cardamom powder:- 1/2tsp
Oil
Let's make the dough!
First, put 2 cups of maida in a bowl and pour 1/4 cup ghee into the maida ( you can also use refined oil )
Mix it for 2-3 minutes.
Pour in the water of a very little amount ( about 1-2 spoons ) and knead it (the dough also has to be very hard, not soft at all )
Let it sit for half an hour.
Let's make the filling!
Put 2tsp Desiccated coconut in a kadhai.
Cook it till you can smell a good scent.
Take it out from the kadhai.
Now in the same kadhai, We will roast suji. To roast suji, we will pour 1/4tsp ghee and 2tsp suji and cook it on low flame.
Roast until it changes its color a little bit.
Take the suji out from the kadhai.
Now in the same kadhai, put 100gm graded Mava and put it on low flame.
Continuously cook the Mava for 2-3 minutes.
Now put the roasted coconut and suji we made into the kadhai and cook it for 2-3 minutes.
Put 1/2tsp cardamom powder and thin chopped dry fruits.
Cook it for 2-3 minutes.
Let it cool for 1 hour.
After it's cooled put 1/2cup powder sugar in and mix it very well.
Let's prepare for the Gujiya!:-
Knead the Gujiya dough that we made for 1-2 minutes.
To make the Gujiya we have to first make a Slurry. This is how you make a Slurry:- In a 1/2cup of water, add 1 or 1/2tsp Maida, mix it and the slurry is ready!
Let's make the Gujiya!:-
Take the Gujiya dough and make balls out of it.
Put any flat surface ( like a wooden board ) under the balls and make the balls flat using a belan ( also, use oil to grease on any flat surface and your belan so the dough doesn't stick with anything )
Use a Gujiya mold to mold the dough into a Gujiya shape and put the filling inside the mold ( also, put some slurry on the sides of the dough )
Gently close the mold and take out the access of the dough ( make sure it is tightly closed )
Gently take out the mold.
Do the same with the other balls.
